Functional Performance Specifications for 40 Gallon Steam Kettle

The steam kettle will be used to prepare healthy menu items, increase menu item offering, and increase production efficiency. Heart healthy food items are foods that are rich in nutrients and low in unhealthy fats to which the steam kettle can cook foods in little or no fats buy using techniques such as boiling and searing. The steam kettle will be used to prepare new recipes that are heart healthy such as stews and lean meats (Beef Stew, Turkey Ala King, and Yankee Pot Roast) that will provide much needed healthy variety. The steam kettle will be used for healthy cooking method that require little or no fats such as braising, searing and boiling. The steam kettle s ability to prepare large batches will be used to increase production by eliminating multiple small batches of food items subsequently reducing the cook s workload. The steam kettle will be used to help ensure the KCVA is complying with VHA Directive 1439 by enabling the production team to prepare meals that are healthy and attractive for our veteran population.
