Response to Questions:
1. What is the contract period? It is an initial one (1) year period with an opportunity based on performance and price for an additional one (1) year period for 2 times for a total of three (3) years as part of an annual contract.
2. What equipment is required from the successful vendor? The successful vendor shall furnish all food preparation equipment, production equipment, all labor, food service equipment, food, beverages, materials, supplies, paper goods and chemicals necessary to provide food services for the inmates and staff at the Hall County Jail. The successful vendor shall provide staffing and meals for Jail, Male Work Release and Female Work Release. Equipment by the successful vendor includes smallwares and trays. Currently approximately 75% of all the trays at the Jail belong to Hall County. The remaining 25% belong to the current vendor. As Hall County s trays wear out and become unusable, they will be replaced by vendor owned trays. All major equipment (ovens, fryers, dishwashers, mixers, etc.) are provided by Hall County.
3. Who is responsible for equipment repairs? Repair costs will depend on the cause of the damage. Damage caused by vendor operation will be covered by the vendor. Damage through regular wear and tear will be covered by Hall County.
4. Who will provide bulk delivery? Bulk delivery will be provided by Hall County.
5. How many inmates work in how many shifts? There are currently two (2) shifts of fourteen (14) to eighteen (18) inmates working each shift.
6. Does fresh salad fall under the category of fresh vegetables? Yes, fresh salad falls under the category of fresh vegetables.
7. Will there be any special religious iets required as part of the meal plan? No special religious diets will be required as part of the meal plan.
8. Can a copy of the current menu be provided? No.

9. What is the current inmate meal price? The current inmate meal price is $ 0.78 each.
10. Is the contract length 3 years with two 1 year renewals? Refer to Question # 1.
11. Is the meal pattern: hot breakfast-cold sack lunch-hot dinner? Yes, except not sack for lunch.
12. What is the staffing pattern requested? Utilize staff to best run the kitchen (approximately five (5) to eight (8).
13. How many inmates have a prescription for ensure? There are no inmates with a prescription for ensure.
14. How many total diets do you currently have? There are currently 34 total diets.
15. Are any meals served to the staff at breakfast? There are no meals served to the staff at breakfast.
16. How many staff members do you have per shift? What is the total amount of employees for the jail? There are 45 staff members per shift. The total amount of employees at the jail is 250.
17. Is there a staff dining menu? Can it be provided? There is no staff dining menu that can be provided.
18. Will the County continue to transport meals to other sites? Yes, the County will continue to transport meals to other sites.
19. Please define what smallwares must be purchased by the awarded bidder? Smallwares are defined as items not attached to the kitchen as capital in nature.
20. How many special functions are done throughout the year? How is it being billed? There are approximately six (6) to eight (8) special functions done throughout the year. It is billed to the current vendor.
21. How much federal surplus food do you currently receive? The County receives no federal surplus food.
22. Will the contract terms be 3 years; 1 year with 2 one year extension? Refer to Question # 1.
23. Will the County continue to transport meals to the work release centers? Refer to Question # 19.
24. How many inmates workers will be available per shift? Refer to Question # 5.

25. Will the inmates be allowed to prepare and cook inmate meals? Yes, the inmates will be allowed to prepare and cook inmate meals.
26. Is chicken allowable as the meat portion of casseroles? Yes, chicken is allowable as the meat portion of the casseroles.
27. Are ground beef and ground beef patties each required to be used in the menu one time per cycle? Yes, ground beef and ground beef patties each are required in the menu one (1) time per cycle.
28. In referencing page 7, Breakfast menus will consist of only 3 meat days . Are eggs considered meat here? No, eggs are not considered meat.
29. In referencing page 10, will a fruit beverage enhanced with vitamins suffice as an equivalent product to Gatorade? Yes, a fruit beverage enhanced with vitamins will suffice as an equivalent product to Gatorade.
30. In referencing page 10, are sack lunches required for work release inmates only? Yes, sack lunches are required for work release inmates only.
